Got the sanding done, need a finish. Looks better than most I've done so want a nice durable finish now, not concerned about food safe.
I know cherry darkens with age, so don't want anything to hasten that. No spray equipment, so need wipe or brush on stuff.
10° in the shop.....I have time to listen to everybody!

Any oil finish will darken the wood but applies easy - walnut oil, Tried and True (Traditional), tung oil, etc.

Spray lacquer will not darken much - pick your sheen gloss, semi, matt.

Shellac or a friction polish (which normally is shellac) should not darken much upon application.

I use polymerized tung oil on almost everything. Can get from a soft satin to gloss finish depending on number of coats. Wipe on until wood is saturated, let it sit a little while and wipe off, let it dry (I wait 24 hours), repeat as needed for desired sheen.

If you want durable, don't use friction polish or shelac, poly is my favorite for durability. Curious why you don't want cherry to get darker, most.people find it desirable, including me. I will put a piece out in the sun for a day or two for this reason, ....

Oh, I don't mind it getting darker, I know it will. Just not wanting a finish that will make it so.....or maybe the right term is yellowing. Just wanting a 'neutral' finish let's say.

By 'poly'....you mean polyurethane, polyacrylic or.....???

I've been using a lot of cherry lately for bowls, both natural edge as well as traditional. l'm a big fan of Mahoney's Walnut Oil and Tried and True.
