Sure am glad I've got New Mexico between me and Texas the way daniscool talks about them fellers !
He might only be making those jokes since there is a lot of land and water between him & Texas.

I have been to Texas. They all think they know how to barbecue. Having been to Australia I disagree. (They are the real masters though they waste beautiful gidgee as firewood)

I will admit that Australians really do barbecue very well, as I’ve been there many times. Their beef is first rate, their shrimp quite excellent, and even lamb (best I’ve ever had). I never focused on the wood they used, as my visits there were before I was into woodworking. Chuck

They don’t all burn gidgee but some of them just decided at some point that dense woods were better for barbecue and since gidgee was fairly common and easy to dry assuming one didn’t care about checking which resulted in beautiful gidgee being cut and burned. And then there are the real evil ones who decided that ringed gidgee was better than regular gidgee because it was denser. Aarrgghh why? Why the best stuff? It’s like saying:“oh I‘ll go and burn some cocobolo so that my beef tastes better.“
