An intro post is customary before getting into other discussions.

As (when I have the time) primarily make items that come into contact with food, I am limited to food safe finishes.

I use linseed oil. You should use raw linseed oil unless it specifically states that it is food safe. Avoid boiled linseed oil as it contains toxic dryers. There are exceptions as with the product I use:

Tung oil and walnut oil work too. All of these oils polymerise (dry) and are usually food safe and natural. Check the product though.

I use beeswax as a topcoat and sometimes to fill pores of very porous woods in a blend with the linseed oil. This works well for things like oak or ash assuming they aren't cooked as with a spatula or cooking spoon.

Mineral oil is another option which I don't really use much. If you want you can use that too.

Sometimes I don't finish altogether. Treen (food utensils from wood) used to be disposable and wasn't finished. Sometime last century this changed and we have this salad of finishes and techniques. Consider leaving your wood unfinished.

For food safe I blend beeswax and walnut oil to a paste. I use it on the inside surface but it has no shine. For the outside I generally use lacquer sanding sealer then finish with satin, semi, or high gloss, sprayed. usually 3 coats.
