Need advise on sealing old growth redwood

I understand problems with water base. But, if you want to finish cherry and stop or at least slow down darkening, water base works. Kathie wanted cherry cabinets darker than natural but also wanted them to stay that color. I said ok, I will try, and it worked. 17 years. Maybe a little darker but very little.
