I used water based poly on our kitchen cabinets. StainedWater based varnish. What one of my German associates uses for his holly. He says it doesn’t yellow much.

That is what I used on kitchen cabinets. It is very durable. Thanks.Mike, for the past 6 years or more, I've been using Minwax "Polycrylic" usually "Satin". It doesn't yellow, and is very durable....I used to swear I would never use a water-based finish, nor those cheapie foam brushes.......but Polycrylic has changed my opinion......for the most part it is my
"go to finish....

I use general wipe on poly. Love it come to think of it I have a maple jewelry box. I will check it."Any other color than yellow spray paint works great." Fixed this for you.
And Mike ( @Mike1950 ) the best non-yellowing stuff I've found was either wipe-on poly or clear shellac.
