That write up is amazing. I do think that rays have their uses but they are not that different from curl to the untrained eye (most people who aren’t woodworkers) eyes on the other hand have a special wow factor.Here’s a look at the grain pattern when scarfed off the log.

Based on your sample sketches the ones labeled cross-cut and quarter sawn will look the same, commonly referred to as rays.

Flatsawn will give you eyes or the starburst effect depending on the burls characteristics

Personally I prefer the look of what you’re calling flat sawn for both flat work and a turned piece.
