After smoking, you really need to wrap it up or vaccuum pack it, and store it in the fridge for 2 weeks to a month or so to mellow. If you ate it right now, it would be similar to eating a cheesy ash tray.I’m not familiar with this process. What do you do with the cheese when you are finished with it on the grill? No way you can eat it all in 1 sitting. Store it in refrigerator or freezer? Chuck
