I was looking at the finish on a walnut gunstock and it’s slick as a baby’s backside. The finish is satin and not a grain dimple in it. What grain filler do you think was used? (Browning manufacturer). And finish?

If its not high gloss, I'd expect it to be a hand-rubbed oil finish. Likely wetsanded with the oil multiple times with finer and finer grits (with time to dry in between) to fill grain before final rubbing.
 
Hand rubbed oil with good sanding or blade finish will make an extremely good satin surface. Very tactile too. A lot of work though. If it isn't expensive I would not say it's oil. (I don't know my way around guns. They are a lot harder to get in the EU)
