4= 6x6x4 pieces of osage orange. 2 new blades for my bandsaw. A box of disposable gloves and if shipping counts my new Harvey T-60S. All due in by Tuesday.

How's this for some pepperoni! It's not in the mail to me yet, but some other chubs will be after it finishes drying.

This is some my nephew made, cured, fermented, dried to 20% then smoked. They will use this for pizza and sandwiches. 100 mm chubs.

What he will send me will be dried to 35% moisture loss.

Wouldn't have posted yet, but saw @Wildthings mention of pepperoni and had to show the picture.

I think you can get natural casings from a butcher shop. I know one near me that has them, and they also make their own sausages.

If you can't locate them locally, here are several options.

Syracuse Casings.

All three have quality casings in many sizes, and it is highly debated which is best. All are good.
